They’ve had the Fortaleza Still Strength, or they’ve been hunting a bottle of Cascahuín Tahona, and they want to see where both come from without spending two days and two drivers doing it. Depending on the day and the season you may walk past ovens mid-cook, open fermentation tanks in motion, and the still room in operation.

 

Your guide walks the process in order: agave selection and jima, cooking in the masonry ovens, milling, open-air fermentation, and distillation. The walkthrough covers the full pre-industrial process: the masonry stone oven, the tahona wheel still used to crush cooked agave, open-air fermentation in wooden tanks, and the small copper pot stills. You’ll see the agave the estate draws from and hear the Sauza family history, from Don Cenobio through Guillermo’s decision to restart the distillery in 2005.

 

The guided tasting covers the Fortaleza core range, Blanco, Reposado, and Añejo, and depending on availability the release guests ask about most, the Still Strength. Citrus, salt, soda and tequila served in a clay cantarito the size of your head, under a tin roof, usually with a band playing. It’s loud, it isn’t refined, and after a day of careful tasting it’s exactly the right ending. Say yes if you’ve got the energy.
